Liver Loaf 2 Recipe

Ingredients
  • 2 c Hot water
  • 4 1/4 lb Beef liver -- sliced
  • Crisp bacon pieces
  • 4 ts Worcestershire sauce
  • 1/2 c Melted fat or oil
  • 2 tb Instant minced onion
  • 1 tb Salt
  • GARNISH -----
  • 2 lb Bulk pork sausage
  • 2 Beef bouillon cubes
  • 1 tb Celery salt
  • 2 c Dry fine breadcrumbs
  • 8 lg Eggs -- beaten
  • 1/4 c Lemon juice
  • 1/2 ts Pepper

Directions
  • Step #1 preheat your trusty oven to 400B0 F.
  • Step #2 (hot).
  • Step #3 Line four 8x8x2-inch baking pans with heat-resistant freezer wrap.
  • Step #4 Allow enough extra wrap to fold over top.
  • Step #5 Use one pan for each six servings or one-fourth of the recipe.
  • Step #6 Do not line pans for food to be served without freezing.
  • Step #7 Grease other shallow baking pans for cooking the liver.
  • Step #8 Place the liver slices in the pans.
  • Step #9 Brush with melted fat.
  • Step #10 Brown in oven for 20 mins.
  • Step #11 Drain.
  • Step #12 Put liver through food chopper.
  • Step #13 Dissolve bouillon cubes in hot water.
  • Step #14 Mix liver & bouillon with remaining ingredients.
  • Step #15 Press one-fourth of the mixture into each baking pan.
  • Step #16 Pack mixture tightly to avoid air pockets.
  • Step #17 TO serve this withOUT FREEZING: preheat your trusty oven to 350B0 F.
  • Step #18 (moderate).
  • Step #19 Bake 45 mins or until loaf is done in center.
  • Step #20 Garnish with bacon piece.
  • Step #21 TO FREEZE: Complete wrapping by pulling paper up over top of food.
  • Step #22 Put edges of wrap together & fold several times so paper lies directly on top of food.
  • Step #23 Fold ends of freezer wrap over the top and seal with freezer tape.
  • Step #24 Label with name of food, date of freezing, & last date the food should be used for best eating quality (about 6 months).
  • Step #25 Freeze as soon as possible for 10 to 12 hrs before removing packages from the pans.
  • Step #26 TO HEAT FROZEN LOAF: preheat your trusty oven to 350B0 F.
  • Step #27 (moderate).
  • Step #28 Remove freezer wrap.
  • Step #29 Place loaf in baking pan.
  • Step #30 Bake 1 1/4 hrs or until loaf is done in center.
  • Step #31 Garnish with crisp bacon piece.
