Lobster In Tomato Sauce With Saffron Rice Recipe

Ingredients
  • 1/4 c Cream
  • 3 tb Flour
  • 2 Egg yolks, mixed lightly
  • 1/2 ts Salt
  • 1 c Cracker crumbs
  • 1 ts Worchestershire sauce
  • 3 tb Butter
  • 2 tb Butter
  • 3 c Warm milk
  • 1 Juice of 1 lemon
  • 1 c cooked lobst
  • 1 tb Minced parsley

Directions
  • Step #1 Mix flour, 3 T butter in sautee pan; add milk, stirring, to make white sauce.
  • Step #2 Add salt, bring to light boil, remove this from heat.
  • Step #3 Mix in lobster (can be fresh or canned).
  • Step #4 Line baking dish with cracker crumbs (reserve about 1 T), spread 1/2 the lobster mixture on crumbs.
  • Step #5 To the rest add all other ingredients, mix, & spread in same dish.
  • Step #6 Bake in oven until warm (about 15 mins).
  • Step #7 Serve in casserole dish garnished with asparagus & lemon strips.
  • Step #8 This mixture can also be served in pastry shells.
  • Step #9 "Salsa negra" - I'm not sure what this is.
