Cranbrosia Gelatin Mold Recipe

Ingredients
  • 1 c sour cream
  • 1 (11 oz) can mandarin oranges
  • 2 tbsps confectioners' sugar
  • 1 (8 oz) can sliced pineapple
  • 1 c heavy whipping cream
  • 1 c sugar
  • 2 c fresh or frozen cranberries, coarsely sliced
  • 2 envelopes unflavored gelatin

Directions
  • Step #1 In a bowl, mix cranberries & sugar.
  • Step #2 Let stand for 30 mins or until sugar is dissolved, stirring every once in awhile.
  • Step #3 Drain juice from oranges & pineapple, reserving 3/4 c juice.
  • Step #4 Cup pineapple into small pieces.
  • Step #5 Set fruit aside.
  • Step #6 In a small saucepan, sprinkle gelatin over reserved juice; let this stand for 1 min.
  • Step #7 Cook & stir over low heat/flame until gelatin is dissolved, about 2 mins.
  • Step #8 Add to cranberry mixture; stir in the the oranges & pineapple.
  • Step #9 Fold in sour cream.
  • Step #10 In a small mixing bowl, beat cream until it begins to thicken.
  • Step #11 Add confectioners' sugar; beat until soft peaks form.
  • Step #12 Fold into fruit mixture.
  • Step #13 Pour into a 6-c ring mold or 12 individual molds lightly coated with nonstick cooking spray.
  • Step #14 Refrigerate until set.
  • Step #15 Unmold before serving.
