Creamy Shrimp Stir Fry Recipe

Ingredients
  • 1 medium carrot, cut into 1/4-inch slices
  • 1 (8 oz) can sliced water chestnuts, drained
  • 1 c sour cream
  • 1 celery rib, cut into 1/4-inch slices
  • 1/4 tsp pepper
  • 2 tbsps butter or stick margarine
  • Hot cooked rice
  • 1/2 lb fresh mushrooms, sliced
  • 1/2 c plain yogurt
  • 1 1/2 lbs uncooked medium shrimp, peeled & deveined
  • 1 small onion, halved & sliced

Directions
  • Step #1 In a large skillet or wok, stir-fry vegetables in butter until crisp-tender.
  • Step #2 Add shrimp; cook & stir for 2-3 mins or until shrimp turn pink.
  • Step #3 Reduce heat to low.
  • Step #4 Add the sour cream, yogurt & pepper; cook & stir until heated through (do not boil).
  • Step #5 Serve over rice.
