Louis Dressing Recipe

Ingredients
  • 4 c Water, salted
  • 1 Garlic clove, mashed
  • 3 tb Peanut oil
  • 1/4 ts Paprika
  • 1 lb Green beans, fresh
  • 1/2 ts Ground cumin
  • 1 tb Almonds, slivered
  • 1/4 ts Ground cloves

Directions
  • Step #1 Clean & trim green beans.
  • Step #2 Simmer in lightly salted water until just tender, about 30-45 mins.
  • Step #3 Drain & put in serving dish.
  • Step #4 Put remaining ingredients (except almonds) in a saucepan over medium heat & cook for two mins, stirring constantly.
  • Step #5 Add the almonds & stir briefly to coat.
  • Step #6 Pour the oil mixture over the green beans & toss carefully until beans are thoroughly coated.
  • Step #7 Serve warm.
  • Step #8 NOTES: Algerian green beans with almonds -- This is a variation on an Algerian recipe from Rose Dosti's "Middle Eastern Cooking.
  • Step #9 " Since when is North Africa in the Middle East? You may well ask.
  • Step #10 Canned green beans are not an acceptable substitute in this recipe.
  • Step #11 Powdered garlic is probably OK.
  • Step #12 : Difficulty: easy.
  • Step #13 : Time: 10 mins preparation, 50 mins cooking.
