Ingredients
2 1/2 oz Finely sliced onion
1/2 pt Buttermilk, more if desired
10 oz Corsely grated raw potato
1 1/4 pt Chicken or vegetable stock
Fresh young lovage leaves
Directions
Step #1 Put the onion into a heavy-based saucepan.
Step #2 Add the stock & bring to boiling point very slowly so the onion begins to soften a little.
Step #3 Meanwhile coarsely chop a small handful (5 or so tbsps) of lovage.
Step #4 Add the potato & herbs to the pan & pour on 1/2 pint buttermilk.
Step #5 Increase the heat very slightly & bring the mixture to a bare simmer.
Step #6 Stir vigorously all the while as the potato starch will thicken the soup, which may stick to the pan base.
Step #7 Half-cover the pan & reduce heat as low as possible once again.
Step #8 Cook very carefully indeed, stirring every once in awhile, until the potatoes are perfectly tender.
Step #9 Whizz the contents of the pan to a smooth puree.
Step #10 Spice up this with salt and pepper & with extra lovage if you like.
Step #11 Whizz again & thin to taste with a little more stock or buttermilk.
Step #12 Reheat carefully or chill thoroughly before serving, then garnish with a swirl of buttermilk & a small flotilla of sliced fresh lovage.
