Ingredients
  • 1/2 c Cottage cheese OR sour cream
  • 1/3 c Tomato, sliced
  • 6 sm New potatoes, cook, cool
  • --KNUDSEN-----
  • Salt & pepper
  • 1/4 c Lettuce, shredded
  • 4 sl Bacon, cooked, crumbled

Directions
  • Step #1 Prep: 30 mins Makes about 12 hors d'oeuvres Halve potatoes, with melon baller, scoop out cavities from cut sides of potatoes (reserve pulp for another use).
  • Step #2 Fill potatoes with cottage cheese, & tomato, bacon, lettuce, dividing equally.
  • Step #3 Sprinkle top with salt & pepper.
