Baa Yir (deep-fried Yellow Bean Paste) Recipe

Ingredients
  • 1 tb Corriander leaves, sliced
  • 6 c Chicken stock
  • 4 tb Ground pork
  • 1 ts Sugar, granulated
  • 1 tb Dried red chile flakes
  • 2 Green onions, thinly sliced
  • 2 tb Fish sauce
  • 8 sl Pork, cooked, 1-1/2" X 3"
  • 6 md Garlic cloves
  • 2 tb Dried shrimp
  • 2 tb Peanuts, roasted & crushed
  • 8 oz Egg noodles, fresh
  • 1 c Bean sprouts
  • 3 Lettuce leaves

Directions
  • Step #1 Blanch the bean sprouts for a min, then set them aside to drain.
  • Step #2 Boil the noodles in plenty of water for five mins, then drain them.
  • Step #3 Next, cook the ground pork in a saucepan over med-heat/flame until it begins to brown.
  • Step #4 Add chicken stock, stir, dried shrimp & fish sauce, & bring the mixture to boil.
  • Step #5 Meanwhile, chop the garlic and fry it in a tbsp of vegetable oil until it is crisp.
  • Step #6 Place the blanched bean sprouts in the bottom of a large serving bowl.
  • Step #7 top this with the cooked noodles.
  • Step #8 Pour the fried garlic & its oil over top of the noodles.
  • Step #9 When the chicken stock mixture boils, add them to the stock, as soon as possible remove the stock mixture from the stove, tear the lettuce leaves into strips, & pour it over the noodles & bean sprouts.
  • Step #10 Garnish with pork slices, green onions & corriander leaves.
  • Step #11 Sprinkle top in the sugar, peanuts & chile flakes & serve as soon as possible.
