Baba Au Cherries Recipe

Ingredients
  • 2 Kaffir lime leaves
  • 4 oz Beans, moong, dried
  • 1 ts Sugar, granulated
  • 1 tb Soy sauce, light
  • Oil; for deep-frying
  • 1 tb Flour, all-purpose
  • 2 ts Red curry paste

Directions
  • Step #1 -THE SAUCE---- 4 tb Sugar, granulated 6 tb Vinegar, rice 1/2 ts Salt Soak the moong beans in water for 30 mins; drain.
  • Step #2 Roll the kaffir leaves into thin cigarettes; slice into slivers.
  • Step #3 In a mortar lb the drained moong beans to form a paste.
  • Step #4 Add the other ingredients in turn, stirring well.
  • Step #5 Pluck a small piece of the paste & form into a ball the size of a walnut.
  • Step #6 Do not mould too tightly.
  • Step #7 Deep-fry the balls until golden brown, drain & serve this with the thick sweet sauce below.
  • Step #8 THE SAUCE: carefully heat the three ingredients until the sugar dissolves.
  • Step #9 allow this to cool before serving.
