Step #1 Put the cod in a deep dish, add cold water to cover, & let it soak for 2 days in the refrigerator in order for it to "plump" up and change the water several times.
Step #2 Rinse & dry the fish & cut it into 2-inch chunks.
Step #3 Dredge the fish in the flour, shaking off the excess.
Step #4 In a large skillet, heat 2 Tbl of the butter & the olive oil.
Step #5 Add the fish pieces & brown them well on all sides over medium-high heat.
Step #6 Sprinkle top the fish with the minced garlic and parsley & stir the mixture carefully.
Step #7 Cut the remaining 2 Tbl butter into bits & add it to the pan.
Step #8 Sprinkle top the fish with salt and pepper & pour over the lemon juice.
