Baccala Alla Bolognese (btvc62a) Recipe

Ingredients
  • 2 tb Olive oil
  • 4 tb Butter
  • 1 3/4 lb Dried codfish
  • Flour; for dredging
  • Salt & pepper to taste
  • 1 Lemon; juiced
  • 3 tb Fresh parsley; minced
  • 1 Clove garlic; minced

Directions
  • Step #1 Put the cod in a deep dish, add cold water to cover, & let it soak for 2 days in the refrigerator in order for it to "plump" up and change the water several times.
  • Step #2 Rinse & dry the fish & cut it into 2-inch chunks.
  • Step #3 Dredge the fish in the flour, shaking off the excess.
  • Step #4 In a large skillet, heat 2 Tbl of the butter & the olive oil.
  • Step #5 Add the fish pieces & brown them well on all sides over medium-high heat.
  • Step #6 Sprinkle top the fish with the minced garlic and parsley & stir the mixture carefully.
  • Step #7 Cut the remaining 2 Tbl butter into bits & add it to the pan.
  • Step #8 Sprinkle top the fish with salt and pepper & pour over the lemon juice.
  • Step #9 Serve as soon as possible.
