Bacon Fried Rice Recipe

Ingredients
  • 1/2 lb Cheddar cheese, grated
  • 2 Jalapenos, sliced, remove seeds for sissies.
  • 1/2 lb Monteray Jack, grated
  • 1 md Red bell pepper, sliced
  • 4 Eggs, beaten
  • 1/2 lb Butter
  • 1 md Poblano pepper, sliced
  • 12 oz Quick grits
  • 2 qt Water
  • Salt, to taste
  • 1 md Onion, sliced

Directions
  • Step #1 Bring water to a boil.
  • Step #2 Add grits & let simmer for 5 mins.
  • Step #3 (For thinner grits, add more water.
  • Step #4 ) Set aside.
  • Step #5 Melt butter in a large skillet over medium high heat; add peppers & onion.
  • Step #6 Saute until tender, about 5 mins.
  • Step #7 Add to grits, along with cheeses.
  • Step #8 Add eggs & Spice up this with salt.
  • Step #9 pour this into a 2-quart casserole & put in the fridge until ready to cook.
  • Step #10 Bake in a preheated 350 degree oven for 25 mins, or until set.
  • Step #11 Serve as soon as possible.
