Bacon & Oysters Recipe

Ingredients
  • 1/4 c sliced Onion
  • 3 ts Baking Powder
  • 1/3 c Milk
  • 1/2 lb Bacon, sliced
  • 2 Large Eggs, Slightly Beaten
  • 2 1/4 c Unbleached Flour, Sifted
  • 1/2 ts Baking Soda
  • Sesame Seeds
  • 1/2 ts Salt
  • 1 c Dairy Sour Cream

Directions
  • Step #1 Fry bacon until crisp in skillet.
  • Step #2 Remove with slotted spoon and drain on paper towels.
  • Step #3 Saute onion in 1 T bacon drippings until tender (do not brown).
  • Step #4 Set aside to cool.
  • Step #5 Sift together flour, baking powder, baking soda & salt in large mixing bowl.
  • Step #6 mix eggs, milk & sour cream in small bowl; mix well.
  • Step #7 Add all at once to dry ingredients, stirring just enough to moisten.
  • Step #8 stir in the bacon & sauteed onion.
  • Step #9 Spoon batter into greased 2 1/2-inch muffin-pan c, fill 2/3rds full.
  • Step #10 Sprinkle top with sesame seeds.
  • Step #11 Bake in 375 degree F.
  • Step #12 Oven 18 to 20 mins or until golden brown.
  • Step #13 Serve hot with homemade jelly or jam.
