Bacon Wrapped Oysters
Ingredients
1/4 c sliced Onion
3 ts Baking Powder
1/3 c Milk
1/2 lb Bacon, sliced
2 Large Eggs, Slightly Beaten
2 1/4 c Unbleached Flour, Sifted
1/2 ts Baking Soda
Sesame Seeds
1/2 ts Salt
1 c Dairy Sour Cream
Directions
Step #1 Fry bacon until crisp in skillet.
Step #2 Remove with slotted spoon and drain on paper towels.
Step #3 Saute onion in 1 T bacon drippings until tender (do not brown).
Step #4 Set aside to cool.
Step #5 Sift together flour, baking powder, baking soda & salt in large mixing bowl.
Step #6 mix eggs, milk & sour cream in small bowl; mix well.
Step #7 Add all at once to dry ingredients, stirring just enough to moisten.
Step #8 stir in the bacon & sauteed onion.
Step #9 Spoon batter into greased 2 1/2-inch muffin-pan c, fill 2/3rds full.
Step #10 Sprinkle top with sesame seeds.
Step #11 Bake in 375 degree F.
Step #12 Oven 18 to 20 mins or until golden brown.
Step #13 Serve hot with homemade jelly or jam.
