Chinese Shrimp Salad Recipe

Ingredients
  • 1/4 c mayonnaise
  • 1 tbsp lemon juice
  • 1 (11 oz) can lychee fruit, drained with juice reserved
  • 3 Fuji apples - peeled, cored & cubed
  • 1 lb cooked shrimp - peeled & deveined

Directions
  • Step #1 In a large bowl, mix lychees, shrimp & apples.
  • Step #2 Stir in lemon juice & 1/4 c reserved lychee juice.
  • Step #3 Let chill for 15 mins.
  • Step #4 Remove from refrigerator & drain liquid.
  • Step #5 Combine drained liquid with mayonnaise & toss together with fruit.
  • Step #6 Chill for at least another hr & serve cold.
