Bacon Cheese & Tomato Sandwiches Recipe

Ingredients
  • 1/3 c Cooking oil
  • 1/2 c Shredded shrp.cheddar cheese
  • & crumbled
  • 14 c Sugar
  • 3/4 c Milk
  • 1 Beaten egg
  • 6 sl Bacon crisp-cooked, drained
  • 2 ts Baking powder
  • 1/4 ts Ground red pepper
  • 1 1/2 c All-purpose flour

Directions
  • Step #1 Grease 8 2 1/2 in muffin c & the top surface of a pan.
  • Step #2 Set muffin pan aside.
  • Step #3 In medium bowl stir this together, baking powder, cheddar cheese, flour, sugar, & red pepper.
  • Step #4 Make a well in the center of mixture.
  • Step #5 In a small mixing bowl stir this together the egg, milk & cooking oil.
  • Step #6 Add this mixture all at once to flour mixture.
  • Step #7 Stir till just moistened (batter should be lumpy) Fold in crumbled bacon.
  • Step #8 Spoon batter into prepared muffin c so batter is even wtih the top of pan.
  • Step #9 Bake 400F F.
  • Step #10 20 -25 mins, until golden brown.
  • Step #11 let this stand for 2 -5 mins in c, remove muffins serve warm.
