Bacon~ Avocado & Cheese Omelet Recipe

Ingredients
  • 1/8 ts White pepper
  • 1 c Half-and-half or milk
  • 1 Garlic clove,minced
  • 1/2 c Onion,sliced
  • 2 tb Flour
  • 2 tb Butter
  • 1 pn Cayenne pepper
  • 2 pk Frozen spinach
  • 6 Bacon strips
  • 1/2 ts Salt

Directions
  • Step #1 1.
  • Step #2 Cook spinach by boiling or in microwave.
  • Step #3 Drain well & squeeze out as much moisture as possible.
  • Step #4 Chop fine, using food processor/blender of food grinder.
  • Step #5  2.
  • Step #6 Cook bacon in skillet until crisp.
  • Step #7 Remove & drain.
  • Step #8 Crumble and reserve.
  • Step #9 In about 2 T of the bacon fat, saute garlic & onion over medium heat.
  • Step #10 When onion is limp, add spinach.
  • Step #11 Lower heat.
  • Step #12 Spice up this with salt & peppers; stir well as moisture evaporates from spinach, about 1 min.
  • Step #13 remove this from heat.
  • Step #14  3.
  • Step #15 In a separate large skillet, melt butter over med-heat/flame.
  • Step #16 Sprinkle top in flour, stirring constantly until smooth.
  • Step #17 Graduallly stir in half-and-half or milk & cook this until smooth & bubbly.
  • Step #18 stir in the spinach mixture & heat through.
  • Step #19 remove this from heat, stir in the reserved bits of bacon, & serve.
