Bagels (lewis) Recipe

Ingredients
  • 2 pk Active dry yeast
  • 1 tb Salt
  • 1 1/2 c Warm water -- 110-115 F
  • 1 tb Sugar
  • 3 tb Sugar
  • 4 1/2 c Flour

Directions
  • Step #1 In mixer bowl mix 1 1/2 c flour & the yeast.
  • Step #2 mix warm water, 3 Tbls.
  • Step #3 sugar & the salt.
  • Step #4 Pour over flour mixture.
  • Step #5 Beat at lowish speed for 30 seconds, scraping sides of bowl constantly.
  • Step #6 Beat 3 mins on high speed.
  • Step #7 stir in the as much of the remaining flour as you can mix in with a spoon.
  • Step #8 Turn out onto lightly floured surface.
  • Step #9 Knead in enough remaining flour to make a moderately stiff dough.
  • Step #10 Continue kneading until smooth & elastic, 6 - 8 mins.
  • Step #11 Cover; let dough rest 10-15 mins.
  • Step #12 Cut into 12 portions; shape into smooth balls.
  • Step #13 Punch a hole in the center of each with a floured finger.
  • Step #14 Pull carefully to enlarge hole to 1 1/2 to 2 inches.
  • Step #15 Place on a greased baking sheet.
  • Step #16 Cover; let rise 20 mins.
  • Step #17 Broil 5 inches from heat for 1 1/2 - 2 mins on each side.
  • Step #18 Tops should not brown.
  • Step #19 Heat 1 gallon water & 1 tbsp sugar to boiling; reduce heat.
  • Step #20 Cook bagels, 4 or 5 at a time, for 7 mins, turning once.
  • Step #21 Drain.
  • Step #22 Place on greased baking sheet.
  • Step #23 Bake in 375 degree oven 25 - 30 mins.
