Ingredients
  • 2 qt Water
  • 2 3/4 c Flour, all-purpose
  • 1 1/2 ts Salt
  • 1 pk Yeast, active dry
  • 2 ts Sugar

Directions
  • Step #1 Dissolve yeast in 1 c warm water in large mixing bowl.
  • Step #2 stir in the sugar, salt, & 1 2/4 c of flour.
  • Step #3 beat till smooth.
  • Step #4 Stir inremaining flour.
  • Step #5 Turn dough onto lightly floured surface; knead untilsmooth & elastic (about 10 mins).
  • Step #6 place this in greased bowl; turn greased side up.
  • Step #7 turn over & let rise in warm place until double (about 15 mins).
  • Step #8 Dough is ready if an indentation remains when touched.
  • Step #9 Punch down dough; divide into 8 equal parts.
  • Step #10 Roll each part into a rope 6 inches long; moisten ends with water & pinch together to form a circle.
  • Step #11 Or, shape each part into a smooth ball; punch hole in center & roll carefully to enlarge hole & make uniform shape.
  • Step #12 Let rise for 20 mins Heat oven to 375F.
  • Step #13 Heat 2 qts.
  • Step #14 water to boiling in large kettle.
  • Step #15 Reduce heat; add 4 bagels.
  • Step #16 Simmer for 7 mins, turning once.
  • Step #17 Drain on kitchen towel.
  • Step #18 Repeat with remaining bagels, simmering four at a time.
  • Step #19 VARIATION: EGG BAGELS: Increase total amount of flour to 4 c.
  • Step #20 knead for 5 mins.
  • Step #21 Let rise until double (about 45 mins).
  • Step #22 Divide dough into 16 equal parts; shape; & let rise as directed.
  • Step #23 Add 2 T sugar to boiling water.
  • Step #24 Simmer for 4 mins, turning once.
  • Step #25 Beat 1 egg yolk & 1 T.
  • Step #26 water slightly; brush over simmering bagels.
  • Step #27 Bake as directed.
  • Step #28 Makes 16 bagels.
