Bagels 2 Recipe

Ingredients
  • 2 pk Active dry yeast
  • 1 tb Sugar
  • 1 Cornmeal
  • 3 qt Water
  • 1 Egg yolk
  • 3 tb Sugar
  • 3 ts Salt
  • 5 3/4 c Flour
  • 2 c Warm water
  • 1 tb Water

Directions
  • Step #1 mix warm water, yeast & sugar.
  • Step #2 let this stand 5 mins, stir in the salt.
  • Step #3 slowly mix in 4 c of flour, beat at medium speed for 5 mins.
  • Step #4 With spoon add 1 1/4 c more flour to make a stiff dough.
  • Step #5 Turn out on a floured board & knead until smooth, elastic, & no longer sticky (about 15 mins), adding more flour as needed.
  • Step #6 Dough should be firmer than for most yeast breads.
  • Step #7 place this in a greased bowl, cover, let rise until almost doubled (about 40 mins).
  • Step #8 Knead dough lightly & divide into 12 equal pieces.
  • Step #9 To shape, knead each piece, forming it into a smooth ball.
  • Step #10 Holding ball with both hands, poke your thumbs through the center.
  • Step #11 With one thumb in hole, work around perimeter, shaping bagel like a doughnut 3 to 3 1/2 inches across.
  • Step #12 Place shaped bagels on lightly floured board, cover lightly & let this stand in a warm place for 20 mins.
  • Step #13 Bring the 3 quarts of water & 1 tbls sugar to boiling in large kettle.
  • Step #14 Adjust heat to keep it boiling carefully.
  • Step #15 Lightly grease baking sheet & Sprinkle top with cornmeal.
  • Step #16 Heat oven to 400F degrees.
  • Step #17 carefully lift one bagel at a time & drop into water, turning often, boil about 4 at a time, for 5 mins.
  • Step #18 Lift out with slotted spatula, drain briefly on a towel and place on baking sheet.
  • Step #19 Brush with glaze made with 1 egg yolk & 1 tbls water.
  • Step #20 Bake 35 - 40 mins, or until well browned & crusty.
  • Step #21 Cool on rack.
  • Step #22 WHOLE WHEAT BAGELS: Follow basic recipe, omitting sugar.
  • Step #23 Use 3 T honey instead.
  • Step #24 In place of flour, 1/2 c wheat germ, & about 2 3/4 c all purpose flour, use 2 c whole wheat flour, mixed together.
  • Step #25 Knead with white flour.
  • Step #26 PUMPERNICKEL BAGELS: Follow basic recipe, omitting sugar.
  • Step #27 Use 3 T dark molasses in place of sugar.
  • Step #28 In place of flour use 2 c rye, 2 c whole wheat, 1 3/4 c all purpose flour mixed together.
  • Step #29 Knead with white flour.
  • Step #30 ONION BAGELS: Add 1/2 c instant toasted onion to basic dough with the yeast , water & sugar in basic recipe.
  • Step #31 SEEDED BAGELS: Springle boiled bagels with sesame seed, poppy seed, or caraway seed after using egg wash & before baking.
