Bagels 3 Recipe

Ingredients
  • 2 c Lukewarm potato water
  • 4 Eggs; slightly beaten
  • 8 c Flour
  • 1 tb Sugar
  • 2 qt Boiling water
  • 1/4 c Salad oil
  • Poppy seed or sesame seed
  • 1 tb Salt
  • 2 Cakes fresh yeast
  • 2 tb Sugar

Directions
  • Step #1 (Water which peeled potatos have cooked in.
  • Step #2 Plain water may be used, but it's not as good.
  • Step #3 ) Sift together dry ingredients.
  • Step #4 Soften yeast in 1/3 of potato water.
  • Step #5 Add to flour.
  • Step #6 Add oil to remaining potato water & stir in theto the flour mixture.
  • Step #7 Add eggs & stir briskly to form a ball of dough.
  • Step #8 Knead on a lightly floured board for 10 mins.
  • Step #9 (This MUST be a firm dough) Add more flour if necessary.
  • Step #10 Return to the bowl--smooth side up.
  • Step #11 Cover with a towel (tea etc) & let rise at room temperature until the dough rises to the top of the bowl.
  • Step #12 Knead again on a lightly floured board until smooth & elastic (as for rolls).
  • Step #13 Pinch off pieces of dough & roll between the palms of the hands to form ropes about 6 inches long & 3/4 inches wide.
  • Step #14 Pinch the ends together firmly to make a doughnut shape.
  • Step #15 Add sugar to boiling water.
  • Step #16 Drop bagels into water one at a time.
  • Step #17 As they come to the surface, turn them over.
  • Step #18 Boil 1 min longer on the second side.
  • Step #19 Place on a greased cookie sheet & bake this at 450 F.
  • Step #20 until the crust is golden brown & crisp--10 to 15 mins.
  • Step #21 Bagels may be Sprinkle topd with poppy seed or sesame seed before baking if you like.
