Ingredients
Water
1 tb Salt
2 pk Active yeast
4 1/2 c All-purpose flour
1 Egg white
3 tb Sugar
1 tb Sugar
2 tb Margarine
Directions
Step #1 Mix 1 1/2 c flour, 3 Tbs sugar, 1 Tbs salt & yeast.
Step #2 Heat 1 1/2 c water & margarine to 120F to 130F.
Step #3 Add to dry ingredients; beat for 2 mins at medium speed.
Step #4 Add 1/2 c flour; beat at high speed for 2 mins.
Step #5 stir in the more flour to make a stiff dough.
Step #6 On floured board, knead for 8 to 10 mins.
Step #7 Set in greased bowl; turn to grease top.
Step #8 Cover; let rise in warm, draft-free place for 1 hr.
Step #9 Punch dough down.
Step #10 Cover; let rest for 15 mins.
Step #11 In a large skillet heat 1-inch water over medium low heat to a simmer; add remaining sugar & salt.
Step #12 Divide dough into 12 pieces; shape 3 pieces into smooth balls.
Step #13 With floured finger, poke a 1-inch hole in each.
Step #14 Drop bagels into simmering water.
Step #15 Cook for 3 mins.
Step #16 Turn & cook for 2 mins.
Step #17 Turn again; cook for 1 min more.
Step #18 Drain on towels.
Step #19 Repeat shaping & cooking rest of dough.
Step #20 Place on greased baking sheet.
Step #21 Mix egg white & 1 Tbs water; brush on bagels.
Step #22 Sprinkle top with coarse salt, sesame, caraway or poppy seed if desired.
Step #23 bake this at 375F for 20 to 25 mins.
Step #24 remove this from sheets.
Step #25 Cool.
