Bagels 7 Recipe

Ingredients
  • 2 tb Sugar
  • 4 c All-purpose or bread flour
  • Poppy or sesame seeds
  • 1 pk Active dry yeast
  • 1/3 c Warm water
  • 1 c Milk
  • 1 ts Salt
  • Coarse salt, ,
  • 1 Egg beaten with a little water,

Directions
  • Step #1 1.
  • Step #2 Sprinkle top the yeast over the warm water, stir, & let dissolve.
  • Step #3 2.
  • Step #4 Put the salt, flour, & 4 tsp of the sugar in food processor/blender bowl with dough blade.
  • Step #5 Pulse several times to mix well & aerate.
  • Step #6 3.
  • Step #7 mix yeast mixture & milk in a measuring c.
  • Step #8 With processor motor running, piur through feed tube.
  • Step #9 Knead until mixture balls together & is no longer sticky, about 60 seconds.
  • Step #10 Lightly flour alarge plastic bag, squeeze out the air, place the dough in it, and close the end of the bag with a twist tie.
  • Step #11 Let the dough rise until doubled, about 45 mins.
  • Step #12 Punch it down.
  • Step #13 (At this point the dough can be put in the fridged for up to 4 days.
  • Step #14 Bring it to about room temp before proceeding.

  • Step #16 Let the dough rest for ten mins.
  • Step #17 Pull of pieces of dough to form 12 two inch balls.
  • Step #18 Poke a finger through the ball, making a hole the size of a golf ball.
  • Step #19 With fingers, shape the bagel evenly.
  • Step #20 Put the bagels on a cookie sheet, & let them rise until puffy, cover with oiled plastic wrap, about 30 mins.
  • Step #21 preheat your trusty oven to 400F degrees F.

  • Step #23 Bring 4 qts.
  • Step #24 water to boil in a wide pot.
  • Step #25 Add the remaining two tsps sugar.
  • Step #26 Poach the bagels, 3 or 4 at a time, for 30 seconds.
  • Step #27 Turn them & poach for 30 seconds more.
  • Step #28 Remove with slotted spoon, let drip briefly on towel & the place 1 inch apart on baking sheets.
  • Step #29 Brush each bagel with a little of the egg glaze.
  • Step #30 (At this point Sprinkle top on any of the optional salt or seeds.
  • Step #31 ) bake this until golden brown, about 15 mins.
