Baked Butternut Squash & Parsnips Recipe

Ingredients
  • Freshly ground black pepper
  • 1/8 ts Ground cardamom
  • 8 tb Butter; melted
  • 2 ts Anise seed
  • 2 tb Fresh lemon juice
  • 3 tb Brown sugar
  • 1 lg Butternut squash
  • Salt

Directions
  • Step #1 Recipe by: Time Life - Vegetables Peel & cut open the squash.
  • Step #2 remove & discard the seeds & the fibers.
  • Step #3 Cut the squash into 1-inch cubes.
  • Step #4 Turn the squash into a buttered 2-quart baking dish.
  • Step #5 Sprinkle top with the salt & pepper, anise seed, cardamom & brown sugar.
  • Step #6 Drizzle butter & lemon juice over the top.
  • Step #7 Bake the squash, uncovered in a preheated 350F oven for about 30 mins, or until tender.
