Baked Christmas Pudding With Brandy Sauce - D Recipe

Ingredients
  • 3/4 c Molasses
  • 1/2 ts Ground allspice
  • 1 ts Ground cinnamon
  • 3/4 ts Baking soda
  • 1/2 ts Salt
  • 2 Eggs
  • Lemon extract
  • 1/2 c sliced pecans
  • 1/4 c Butter or margarine, softened
  • 1/4 c Sugar
  • 1/2 c Finely sliced yellow candied pineapple
  • 10 To 12 sugar cubes
  • 1 1/2 ts Baking powder
  • Brandy Sauce-separate recipe
  • 1 1/2 c Finely sliced mixed candied fruit
  • 1 1/2 c All-purpose flour, divided
  • 3/4 c Milk

Directions
  • Step #1 mix butter & 1/4 C sugar in a large mixing bowl; beat with a wooden spoon until well mixed.
  • Step #2 Add eggs & molasses, mixing well.
  • Step #3 Dredge candied fruits & pecans in 2 T flour; set aside.
  • Step #4 mix remaining flour & next 5 ingredients; add to creamed mixture alternately with milk, beginning & ending with flour mixture.
  • Step #5 Stir fruit mixture into batter.
  • Step #6 Spoon batter into a greased & floured 2 quart ring mold.
  • Step #7 Cover with foil.
  • Step #8 bake this at 350 for 1 1/2 hrs.
  • Step #9 Unmold onto serving platter.
  • Step #10 Spoon Brandy Sauce over pudding.
  • Step #11 If desired, soak sugar cubes in lemon extract.
  • Step #12 Arrange soaked sugar cubes evenly around heat-proof serving platter, & ignite just before serving.
