Baked Citrus Swordfish Recipe

Ingredients
  • 1/2 ts Ground nutmeg
  • 1 ts Ground cinnamon
  • 1/2 ts Salt
  • 1/2 c Sugar
  • 1/2 c Sugar
  • 2 x Eggs
  • 1/4 c Margarine,melted & divided
  • 1 1/4 c Unsweetened applesauce
  • 5 3/4 c All-purpose flour,divided
  • 2 pk Dry yeast
  • 1 ts Ground cinnamon
  • 1/4 c Warm water
  • 1/3 c Margarine

Directions
  • Step #1 Dissolve yeast in warm water in a large bowl; let this stand 5 mins.
  • Step #2 Add 3 c flour, applesauce, & next 6 ingredients; beat at low speed of an electric mixer until moistened.
  • Step #3 Beat at meduim speed for an extra 2 mins.
  • Step #4 stir in the 2 c of flour, 1/2 c at a time, to form a soft dough.
  • Step #5 Turn out onto a well-floured surface.
  • Step #6 Knead until smooth & elastic(about 5 mins); add enough remaining flour, 1 tbsp at a time, to prevent dough from sticking to hands.
  • Step #7 Place dough in a bowl coated with cooking spray, turning to coat top.
  • Step #8 Cover & let rise in a warm place, free from drafts, 1 hr or until doubled in bulk.
  • Step #9 Punch dough down, & turn out onto a lightly floured surface.
  • Step #10 Roll dough to 1/2 inch thickness; cut with a lightly floured 2 1/2 inch doughnut cutter.
  • Step #11 mix doughnut holes & any remaining scraps of dough; reroll to 1/2 inch thickness and cut as before.
  • Step #12 Place doughnuts on baking sheets coated with cooking spray; brush 2 tbsps melted margarine over doughnuts.
  • Step #13 Let rise, uncovered, in a warm, draft-free place for 40 mins.
  • Step #14 mix 1/2 c sugar & 1 tsp in a large zip-top heavy-duty plastic bag, & set aside.
  • Step #15 Bake doughnuts at 425F degrees for 8 mins or until golden.
  • Step #16 as soon as possible brush remaining 2 tbsps melted margarine over baked doughnuts; add doughnuts to plastic bag.
  • Step #17 Seal the bag and shake to coat.
  • Step #18 Yield: 3 dozen doughnuts.
