Baked Egg Dish Recipe

Ingredients
  • 2 c Tomatoes
  • 1/2 c Parsley; sliced
  • 1/4 c Olive oil
  • Pepper to taste
  • 1 ts Salt
  • 1/8 ts Cinnamon
  • 1 ts Oregano
  • 1/2 c Red wine,
  • Karen Mintzias
  • 1 Garlic clove; pressed
  • 2 lb Eel
  • 4 Onions; thinly sliced

Directions
  • Step #1 Rinse eel with cold water.
  • Step #2 Oil baking pan with half of the oil.
  • Step #3 Place slices of eel on pan.
  • Step #4 Sauce: Heat remaining oil in frying pan, & fry onions & garlic on medium heat for 5 mins.
  • Step #5 add in the remaining ingredients & cover.
  • Step #6 Cook 10 mins.
  • Step #7 pour the sauce over eel.
  • Step #8 Bake 45 mins at 375 degrees.
  • Step #9 serve this with crusty bread & a crisp salad.
