Baked Eggplant Sandwiches Recipe

Ingredients
  • 2 tb Parsley; sliced
  • 1/8 ts Each salt & pepper
  • 3 Garlic cloves; unpeeled
  • 2 ts Lemon juice
  • 4 oz Feta cheese; crumbled
  • Pita bread or crackers
  • 1 lg Eggplant
  • 1 ts Oregano; sliced
  • 1 Red bell pepper - halved & seeded
  • 1 tb Olive oil
  • Olive oil
  • 1 lg Onion; peeled & quartered

Directions
  • Step #1 preheat your trusty oven to 350 F.
  • Step #2 Halve eggplant lengthwise.
  • Step #3 Brush all sides with olive oil.
  • Step #4 Place halves cut-side down on a baking sheet.
  • Step #5 Bake 25 mins.
  • Step #6 Brush onion, garlic & red pepper with oil; add to eggplant.
  • Step #7 Bake 25-30 mins longer or until vegetables are tender.
  • Step #8 Cool eggplant; scoop out flesh & place this in a food processor/blender or wooden bowl.
  • Step #9 Squeeze garlic pulp from skins, oregano, & add to eggplant along with onion, peel red pepper, olive oil, lemon juice, salt and pepper.
  • Step #10 Process or finely chop by hand.
  • Step #11 Do not puree.
  • Step #12 Mix in 3 oz.
  • Step #13 of the feta cheese.
  • Step #14 Spoon mixture into a serving bowl.
  • Step #15 Sprinkle top remaining feta cheese around the edge of mixture; mound parsley in the center.
  • Step #16 serve this with pita bread or crackers.
  • Step #17 Yield: 6 to 8 servings.
