Baked Garlic Chicken Legs Recipe

Ingredients
  • sliced chives
  • 1 x Middle gammon
  • 2 tb Demerara sugar
  • 1/2 pt Cider
  • 2 ts Cloves
  • 2 tb Golden syrup
  • 2 x Bay leaves
  • 1 Tn peach halves

Directions
  • Step #1 Total cooking time: allow 20 mins per lb plus 20 mins extra.
  • Step #2 Wash the joint, cover with water, place this in a saucepan, add the bay leaves & bring to the boil.
  • Step #3 Cover & let simmer for half total cooking time.
  • Step #4 remove this from the pan & discard liquid.
  • Step #5 Set oven to 375/F or Mark 5.
  • Step #6 Remove the skin from joint, score the fat & press in the cloves.
  • Step #7 place this in a roastina tin, pour the syrup over the fatty sides & Sprinkle top with the sugar.
  • Step #8 Add 1/2 pint cider to the tin and bake for remainder of cooking time.
  • Step #9 Baste with the liquid 2 or 3 times.
  • Step #10 Twenty mins before the end of cooking time add the peach halves, reserving the juice, & Sprinkle top with sliced chives.
  • Step #11 When cooked, remove the joint & the peaches.
  • Step #12 Add the peach juice to the tin & boil rapidly to reduce to make a sauce; serve separately.
  • Step #13 FIV1.
