Baked Lamb Shanks --meat-- Recipe

Ingredients
  • 1/2 c Chicken stock
  • 4 Lamb shanks, koshered,
  • Well trimmed, cut into 6 pc.
  • 1 ts Ea. sage, curry pwdr.
  • Bell pepper.
  • Minced fresh basil or dill
  • 1/4 c Tomato juice
  • 3 tb Worcestershire sauce
  • 1 1/2 tb Olive oil
  • 1/4 c Kosher red wine, dry
  • 1 tb Minced garlic
  • 1/3 c Ea. minced onion & green
  • 3 tb Minced shallot

Directions
  • Step #1 d preheat your trusty oven to 375 F.
  • Step #2 Wash meat under hot running water; dry well.
  • Step #3 Prick in several places.
  • Step #4 mix Spice uping; rub all over meat.
  • Step #5 Heat 1 tbs.
  • Step #6 oil in lge.
  • Step #7 enameled Dutch oven.
  • Step #8 Add meat & brown over med.
  • Step #9 heat on one side.
  • Step #10 Scoop up with spatula & turn.
  • Step #11 Add remaining oil & minced ingreds.
  • Step #12 Stir & cook with meat until mixture browns lightly.
  • Step #13 Pour off any fat.
  • Step #14 mix Worcestershire sauce with tomato juice, wine & 1/2 c.
  • Step #15 of stock.
  • Step #16 Pour around sides of pot.
  • Step #17 Bring to boil.
  • Step #18 Cover & bake in center of oven for 30 min.
  • Step #19 Turn & baste.
  • Step #20 Re-cover & bake for 1 hr.
  • Step #21 longer, turning & basting every 20 min.
  • Step #22 (Add some of the remaining stock if liquid evaporates before cooking is completed.
  • Step #23 ) Stir salt into sauce; then spoon over meat.
  • Step #24 Serve on warmed individual plates Sprinkle topd with basil or dill.
