Baked Plum Pudding Recipe

Ingredients
  • 1 c Rice flour
  • 3 lg Very ripe plantains
  • Salt to taste
  • 2 ts Turmeric powder
  • 2 ts Chillie sambal, fresh
  • 60 ml Corn oil

Directions
  • Step #1 Peel the plantains, cut them into small chunks & put into a large deep mixing bowel.
  • Step #2 Mash into a thick paste with your fingers or an electric clender.
  • Step #3 If using a mixer, you may need to add 30-60 ml of water for smoother mixing.
  • Step #4 Add the chilli sambal, rice flour, salt & mix well.
  • Step #5 carefully heat the corn oil in a frying pan & add the turmeric.
  • Step #6 Stir well, remove this from the heat & mix into the plantain mixture which should be thinck yet soft enough to pour.
  • Step #7 If it is too soft, add small amounts of rice flour or if too stiff, add small amounts of water until it reached th described consistency.
  • Step #8 Grease a loaf tin, & pour plantain mixture into it.
  • Step #9 Bake in teh overn on medium to low heat at 150-180C for 1 hr.
  • Step #10 or until cooked and firm.
  • Step #11 When cooked, remove this from the overn & allow to stand for approximately 5-10 mins before turning it out on a wire rack.
  • Step #12 Slice & serve this with salted peanuts or as an accompaniment to spicy dishes.
