Baked Sandwiches Recipe

Ingredients
  • 2 tb Evaporated Milk;
  • 3/4 ts Salt
  • 1/2 c Evaporated Milk; plus
  • 2 1/2 ts Yeast
  • 2 ts Sugar
  • 3 c Flour
  • 3 tb Unsalted Butter

Directions
  • Step #1 --FILLING----- 1 md Idaho Potatoes; cut into -1/2" chunks 1 c Frozen Peas 2 tb Oil 2 Clove Garlic; finely sliced 2 ts Fresh Ginger; finely sliced 1 ts Dried Coriander 1/2 ts Cumin 1/4 ts Pepper 1/4 ts Salt--TOPPING----- 1 Egg; beaten with 1 tb Water Place all dough ingredients in machine & program for knead & first rise.
  • Step #2 Press start.
  • Step #3 The dough will be quite firm but it should be moist enough to hold together.
  • Step #4 Make the filling while the dough is rising.
  • Step #5 Place the potato cubes in a small saucepan & cover with water.
  • Step #6 Bring to a boil over medium high heat, lower the heat to medium and continue cooking for 10 mins, or until they have slightly softened but are not cooked through.
  • Step #7 Add the peas to the boiling water for the last min of cooking.
  • Step #8 Drain the water from the potato cubes and peas.
  • Step #9 Heat the oil in a large frying pan set over medium high heat & add the onions, garlic & ginger.
  • Step #10 Saute until the onions are translucent.
  • Step #11 Add the potato cubes, cumin, peas, coriander, pepper and salt & stir until well mixed.
  • Step #12 remove this from the heat & cool slightly.
  • Step #13 Turn the finished dough out on a lightly floured surface & divide it into 8 equal balls.
  • Step #14 Let the balls rest 10 mins.
  • Step #15 Preheat the oven to 350?F with the rack in the center position.
  • Step #16 Lightly spray a large baking sheet with vegetable cooking spray.
  • Step #17 On a lightly floured surface, roll each ball of dough to a 7" circle, rolling from the middle toward the edge.
  • Step #18 Distribute the filling evenly among the circles, about 3 heaping tb for each one.
  • Step #19 Lightly moisten the edge of each circle with water & fold over to form a semicircle.
  • Step #20 Press the edges together firmly.
  • Step #21 Fold the pressed edge inward toward the filling & press with you fingertips to seal.
  • Step #22 Lift the samosas onto the prepared baking sheet & generously brush the tops with the egg glaze.
  • Step #23 Bake the samosas for 15 mins, or until they are a rich golden brown.
  • Step #24 Serve hot from the oven.
