Ingredients
2 Egg Yolks
1 ts Salt
2 tb Lemon Juice
2 lb Sole, Fresh or Frozen
1 tb Water
1/4 ts Pepper
3/4 c Chicken Broth
1 tb Flour, All-Purpose
1 Green Olives, Stuffed
3 tb Butter
Directions
Step #1 Pre-heat oven to 350?F.
Step #2 Grease a large shallow baking dish.
Step #3 Arrange fillets in dish.
Step #4 Sprinkle top fillets with salt & pepper.
Step #5 Dot with 2 T butter.
Step #6 Bake for 10 mins or until fish flakes easily when tested with a fork.
Step #7 Start sauce preparation about 15 mins before you put the fish in the oven.
Step #8 In a c, mix egg yolks with water, set aside.
Step #9 In heavy saucepan over med-heat/flame, into 1 T of hot butter, stir flour until well mixed.
Step #10 slowly stir in the chicken broth & lemon juice.
Step #11 Cook with stirring until mixture is thickened.
Step #12 Remove saucepan from heat.
Step #13 Into egg yolks, stir 6-8 drops of Tabasco Sauce.
Step #14 Slowly pour egg mixture into sauce, stirring rapidly to avoid lumping.
Step #15 Cook with stirring until thickened (DO NOT BOIL).
Step #16 Spoon off any excess liquid from fish.
Step #17 pour the sauce over fish & garnish with sliced stuffed green olives.
Step #18 The olives add a lot more to this dish than you might imagine.
