Baked Spare Ribs & Sauerkraut Recipe

Ingredients
  • 1 md Green pepper, sliced
  • 6 Eggs, beaten
  • 2 To 3 tb minced fresh cilantro or parsley
  • 1/2 ts Ground cumin
  • 3 Corn tortillas, cut into 1-inch squares
  • 2 md Tomatoes, sliced
  • 2 tb Olive oil
  • 2 Cloves garlic, minced
  • 2 md Onions, quartered & thinly sliced
  • 3 tb Low-fat milk
  • 1/2 ts Dried oregano
  • 1 oz Can mild green chiles, sliced

Directions
  • Step #1 Yield: 6 salt & freshly ground pepper to taste Preheat the oven to 350 degrees.
  • Step #2 Heat a large skillet.
  • Step #3 Toast the cut tortillas on the dry skillet over moderate heat, stirring every once in awhile, until they are crisp.
  • Step #4 Transfer to a plate to cool.
  • Step #5 Heat the oil in the same skillet.
  • Step #6 Add the onions & saute over moderate heat until transplucent.
  • Step #7 Add the garlic & pepper & saute until the onion turns golden & the peppers soften.
  • Step #8 Add the tomatoes and saute for another 2 to 3 mins, just until they soften a bit.
  • Step #9 mix the beaten eggs with the milk in a mixing bowl.
  • Step #10 stir in the the mixture from the skillet, the tortilla bits, & all the remaining ingredients.
  • Step #11 Oil two 9-inch pie tins & divide the mixture among them.
  • Step #12 Bake for 25 to 30 mins, or until set & golden on top.
  • Step #13 Let stand for 10 mins before serving, then cut into wedges to serve.
