Baked Tomatoes Stuffed With Leeks Recipe

Ingredients
  • 1 Green bell pepper, sliced
  • 1 tb Margarine
  • Pinch black pepper
  • 2 Onions, sliced
  • 1/2 ts Salt
  • 2 c Dry bread crumbs
  • Pinch rosemary
  • 1 c Grated cheese
  • 1 cn tomatoes
  • 1 tb Sugar
  • 16 oz Frozen corn kernels
  • 2 tb Chili colorado

Directions
  • Step #1 Contributed to the echo by: Leti Labell Baked Tomatoes & Corn Pour off the liquid from the canned tomatoes.
  • Step #2 Simmer the tomatoes with the sugar & spices for about 5 mins.
  • Step #3 Add the corn, green or red pepper, chili colorado or chili sauce, margarine, onion, and salt.
  • Step #4 Cook slowly for about 15 mins.
  • Step #5 Spray a casserole dish with non-stick vegetable spray.
  • Step #6 Place alternate layers of vegetable mixture, & cheese, bread crumbs, ending up with a layer of cheese.
  • Step #7 Bake in a 400F degree oven for about 20 mins, or until the top is brown.
