Step #1 --FILLING----- 1 1/2 lb Cream cheese 1/4 c Oil 1 1/4 c Sugar 3 ea Eggs; separated 1/4 c Cornstarch 5 ea Drops vanilla extract 1/2 c Milk Sift flour & salt into a large bowl.
Step #2 Using a pastry mixer or 2 knives,cut in butter until evenly distributed & mixture resembles breadcrumbs.
Step #3 With a fork, lightly mix in sugar, egg & enough ice water to make a dough.
Step #4 Press into a ball & wrap in foil or plastic wrap.
Step #5 put in the fridge for 30 mins.
Step #6 preheat your trusty oven to 350f.
Step #7 On a floured surface, roll out dough to fit a 10-in flan tin with a removable bottom.
Step #8 Place dough in tin without stretching.
Step #9 FILLING Beat cream cheese, cornstarch, sugar, egg yolks, oil, vanilla and milk in alarge bowl until smooth.
Step #10 Beat egg whites until stiff; fold into cream cheese mixture.
Step #11 pour this into pastry shell.
Step #12 Bake 50 to 60 mins or until a wooden pick inserted in center comes out clean.
Step #13 Turn off oven.
Step #14 Let cheesecake cool in oven with door open slightly.
Step #15 Remove cooled cheesecake from tin & serve.
