Chicken Fried Rice
Ingredients
2 c long-grain white rice
1/2 tsp salt
1/4 tsp ground black pepper
4 c water
1/4 tsp dried thyme
4 boneless, skinless chicken breasts
1 c all-purpose flour
3 tbsps butter
1/4 tsp salt
3/4 c cold water
1/4 tsp ground paprika
Directions
Step #1 Place rice in a saucepan with 4 c of water.
Step #2 Bring to a boil, then reduce heat to low, cover & let simmer for 20 mins or until rice is tender.
Step #3 Prepare chicken while the rice is cooking.
Step #4 In a medium bowl, pepper, paprika, stir this together the flour, 1/2 tsp salt, & thyme.
Step #5 Use a finger to grind the thyme to a powder in the palm of your hand before adding.
Step #6 Coat the chicken breasts in the flour mixture.
Step #7 Reserve 2 tbsps of the flour mixture for the gravy.
Step #8 Melt butter in a large skillet over med-heat/flame.
Step #9 Place chicken in the skillet, & cook for about 10 mins on each side, until the chicken is golden brown, & the juices run clear.
Step #10 Remove chicken from the pan, leaving the drippings & crusty bits in.
Step #11 Whisk together 3/4 c water, 2 tbsps of the flour mixture, & 1/4 tsp salt.
Step #12 Whisk into the skillet, scraping the browned bits from the bottom of the pan.
Step #13 Cook over med-heat/flame, stirring constantly, until thick & bubbly.
Step #14 Add extra water 1 tbsp at a time if the gravy is too thick.
Step #15 Serve chicken alongside rice topped with gravy.
