Ingredients
1 lb Phyllo dough
1 c Water
1 c Sugar
2 ts Cinnamon
1 1/2 c Honey
2 c Walnuts, finely sliced
1 ts Allspice
3/4 c Sugar
1 1/2 c Unsalted butter
Directions
Step #1 preheat your trusty oven to 300F degrees.
Step #2 In saucepan, mix 1 c sugar & 1 c water; bring to a boil, stirring until sugar dissolves.
Step #3 Continue to cook over med-heat/flame for about 20 mins (until thickness of honey).
Step #4 stir in the honey, continue to cook about 10 mins longer.
Step #5 remove this from heat & set aside to cool.
Step #6 In bowl, & spices, 3/4 c sugar, mix walnuts, set aside.
Step #7 Melt butter, set aside.
Step #8 Remove phyllo dough from package, cover unused portion with damp towel while working with it.
Step #9 Using kitchen scissors, cut to fit a 9x13 inch pan.
Step #10 Coat pan with melted butter.
Step #11 Place 10 phyllo sheets in pan, two sheets at a time, brushing each top sheet with melted butter.
Step #12 Place trimmings between full sheets.
Step #13 Spread with 1/3 of nut mixture, 4-5 sheets of buttered phyllo then the remaining nut mixture.
Step #14 Top with remaining phyllo, buttering every other sheet.
Step #15 With a small, very sharp knife cut pastry lengthwise into 6 strips.
Step #16 Then cut diagonally to make small diamonds.
Step #17 Heat remaining butter (there should be 1/2 c) until frothy & pour it over pastry, letting it run down into cuts.
Step #18 Bake in slow oven for 1 hr.
Step #19 remove this from oven.
Step #20 Turn oven to 400 degrees.
Step #21 Pour about half of syrup mixture over pastry.
Step #22 Return to oven for 2-3 mins until browned on top.
Step #23 Pour remaining syrup over pastry.
Step #24 let this stand at least 3 hrs before serving.
