Balsamic Glazed Chicken With Grilled Treviso Recipe

Ingredients
  • 1 tb Oil, olive
  • 1/4 ts Pepper, red, flakes
  • Basil, sprigs
  • 1 md Onion, thinly sliced
  • 1/4 c Olives, black, sliced
  • 1 ea Pepper, red - cut in 3/4-inch strips
  • 1 ea Pepper, green - cut in 3/4-inch strips
  • 1 ea Pepper, yellow - cut in 3/4-inch strips
  • 1/4 c Vinegar, balsamic
  • 2 lg Garlic, cloves, minced
  • 1/4 c Olives, green, sliced
  • 1/4 ts Pepper
  • 1/2 ts Salt
  • 14 1/2 oz Tomatoes, stewed
  • 6 lg Legs, chicken, whole -
  • 1/4 c Nuts, pine, toasted

Directions
  • Step #1 In a non-stick fry pan, heat the oil over med-heat/flame.
  • Step #2 Add chicken; cover & cook, turning, for about 10 mins until the pieces are brown on all sides.
  • Step #3 Remove the chicken from the pan; set aside.
  • Step #4 To the drippings in the pan, peppers, add onion, & garlic; cook stirring about 5 mins or until slightly tender.
  • Step #5 Add tomatoes, vinegar & red pepper flakes.
  • Step #6 Heat mixture to boiling; reduce heat & let simmer until mixture is slightly thick (about five mins).
  • Step #7 stir in the the olives, salt & pepper.
  • Step #8 Return chicken to the pan; spoon sauce over chicken & cook about 20 mins or until the chicken is glazed & fork tender.
  • Step #9 Arrange the chicken on a serving platter.
  • Step #10 Spoon the vegetable mixture over the chicken.
  • Step #11 Sprinkle top with pine nuts.
  • Step #12 Garnish with Basil sprigs.
