Ban Dua Ca Ra Men (coconut Flan With Caramel) Recipe

Ingredients
  • 2 ea Garlic cloves
  • 1/2 lb Tomatoes, ripe, sliced
  • 4 tb Butter or oil
  • 2 ea Onions, lg, sliced
  • 2 lb Okra, fresh
  • 1 ea Lemon
  • Salt & pepper
  • 1 tb Tomato paste
  • 2 lb Lamb, beef or veal, cubed

Directions
  • Step #1 Wash fresh okra & cut off stems.
  • Step #2 Fry the sliced onions & whole garlic cloves in butter or oil until both are golden & the garlic is aromatic.
  • Step #3 Add the cubed meat & brown all over.
  • Step #4 THen add the prepared okra & fry carefully for a little while longer.
  • Step #5 Add the tomatoes, continue to cook for a few more mins, & cover with water in which you have diluted the tomato paste.
  • Step #6 Spice up this with salt & pepper, & stir well.
  • Step #7 Bring to a boil & let simmer over low heat/flame 1 1/2 hrs or more, until the meat & vegetables are very tender and the sauce is reduced, adding a little more water if necessary.
  • Step #8 Remove from heat, & add juice of one lemon.
  • Step #9 Stir & serve.
