Coconut Cream Cakeii Recipe

Ingredients
  • 2/3 c vegetable oil
  • 1 (18.25 oz) package yellow cake mix with pudding
  • 1/2 c white sugar
  • 1 (10 oz) package flaked coconut
  • 1/4 tsp almond extract
  • 2 tbsps milk
  •  
  • 1/2 c sliced almonds
  • 1 c confectioners' sugar
  • 4 eggs
  • 1 c sour cream

Directions
  • Step #1 Preheat oven to 325F degrees F (165 degrees C).
  • Step #2 Grease a 9x13 inch pan.
  • Step #3 In a large bowl, sugar, mix cake mix, oil, eggs & sour cream.
  • Step #4 Beat mixture for 4 mins, then fold in the coconut.
  • Step #5 Pour batter into prepared pan.
  • Step #6 Bake in the preheated oven for 75 mins, or until a toothpick inserted into the top comes out clean.
  • Step #7 To make the glaze: Combine confectioners' sugar, milk & almond extract, adding more milk if necessary to create the desired consistency.
  • Step #8 Spoon glaze over cooled cake, & as soon as possible sprinkle with sliced almonds.
