  • Step #1 Use 8" x 8" square dish, individual molds, or double recipe for 9" x 13" dish.
  • Step #2 1 Env.
  • Step #3 Knox unflavored gelatin 1 - 16 oz.
  • Step #4 can whole berry cranberry sauce 2 Tbsp.
  • Step #5 sugar 1 - 20 oz.
  • Step #6 can pineapple chunks, in juice 1 c water 1/4 C.
  • Step #7 sliced walnuts (Optional) 2 Tbsp.
  • Step #8 lemon juice 1/2 C.
  • Step #9 no-fat mayonnaise Use pineapple juice to help make 1 c water.
  • Step #10 I cut pineapple chunks in half.
  • Step #11 Mix together gelatin & sugar.
  • Step #12 Add water/pineapple juice combination (1 c total).
  • Step #13 place this in pan over low heat/flame.
  • Step #14 When gelatin is dissolved, remove this from heat.
  • Step #15 stir in the no-fat mayonnaise & lemon juice.
  • Step #16 mix with rotary beater.
  • Step #17 pour this into freezer tray & quick freeze 10-15 mins or until firm 1 inch from edges but still soft in center.
  • Step #18 Beat until fluffy.
  • Step #19 Fold in remaining ingredients.
  • Step #20 pour this into 8" square dish or individual molds that have been sprayed with Pam or equivalent.
  • Step #21 Chill until firm.
  • Step #22 --.
