Low-calorie Pumpkin Pie Recipe

Ingredients
  • ... scooped out & mashed
  • 4 lg Baking potatoes, baked,
  • 2 lg Garlic heads, roasted
  • 2 lg Onions, baked
  • 4 tb Parmesan, grated
  • Salt & pepper to taste
  • 2 tb Buttermilk
  • 1/4 c Skim milk

Directions
  • Step #1 Remove the papery covering of the garlic heads, but do not peel and do not separate the cloves.
  • Step #2 Wrap well in foil & put them in the oven.
  • Step #3 Put the onions on a double sheet of foil, but do not wrap them; put them in the oven.
  • Step #4 Bake the garlic for one hr & the onions for an hr & a half at 425.
  • Step #5 After an hr pull out the garlic heads, unwrap, & let cool for 5 mins.
  • Step #6 Separate the cloves & squeeze them over a bowl so the softened garlic pops out into the bowl.
  • Step #7 After 1 1/4 hrs, pull out the onions.
  • Step #8 If they are not very soft (almost collapsed) put them back in for a few mins.
  • Step #9 With a sharp knife, cut off the stem & root ends of the onions.
  • Step #10 Remove the skin & the first layer.
  • Step #11 Put the onions in a food processor/blender & puree.
  • Step #12 Reduce the oven to 350.
  • Step #13 Beat together the onions, garlic, & potatoes; & salt & pepper to taste.
  • Step #14 Beat in the buttermilk.
  • Step #15 Scrape the mixture into a gratin dish.
  • Step #16 Smooth the top & Sprinkle top with the cheese.
  • Step #17 (The recipe can be prepared to this point ahead of time & kept in the refrigerator for a couple of days.
  • Step #18 Bring to about room temp before proceeding) Drizzle milk evenly over the top of the potatoes.
  • Step #19 Bake uncovered for 35 - 45 mins, bubbly, or until brown, & thoroughly hot.
  • Step #20 Serve at once.
