Ingredients
  • 13 oz Can evaporated skim milk;
  • 2 Egg whites;
  • 2 tb Sugar;
  • 8 pk Sugar substitute;(16 ts-1/3c
  • 2 ts Vanilla;
  • 2 ts Pumpkin pie spice;
  • 1/2 c Biscuit mix like Bisquick;
  • 16 oz Can solid-pack pumpkin;
  • 1 Egg;

Directions
  • Step #1 Heat oven to 350 F.
  • Step #2 Lightly grease or spray 9 inch pie pan with vegetable pan spray.
  • Step #3 Place all ingredients in mixer, food processor or mixing bowl.
  • Step #4 mix 1 min or beat 2 mins with mixer.
  • Step #5 pour this into pie pan & bake for 50 mins or until center is puffed up.
  • Step #6 1/8 pie - 114 calories, 1 1/2 starch/bread exchange 18.
  • Step #7 5 grams carbohydrate, 6.
  • Step #8 3 grams protein, 1.
  • Step #9 9 grams fat, 1.
  • Step #10 4 gm fiber 174.
