Low-fat Apple Walnut Bran Muffins Recipe

Ingredients
  • 1 1/2 c Low-Fat Cottage Cheese
  • 1 tb Snipped Fresh Basil
  • 2 tb Grated Parmesan Cheese
  • 1/8 ts Each Salt & Pepper
  • Cooked & drained
  • 1/2 c Red Sweet Pepper -- sliced
  • 3 tb Low-Fat Milk
  • 1 Clove Garlic -- minced
  • 1/2 c Frozen Peas
  • 1 tb Margarine -- see note
  • 8 oz Fettuccine Or Linguine --

Directions
  • Step #1 I would leave this out, & saute with water In a mixer container mix cottage cheese & milk; mix til smooth.
  • Step #2 In a 2-quart saucepan cook sweet pepper & garlic in hot margarine until tender.
  • Step #3 Reduce heat.
  • Step #4 Add milk mixture, peas, salt, & pepper.
  • Step #5 Cook & stir till heated through (do not boil) Toss with hot pasta.
  • Step #6 Sprinkle top with Parmesan & basil.
  • Step #7 makes 4 main-dish servings.
  • Step #8 nutrition facts per serving: 362 calories, 52 g carbohydrates, 338 mg sodium, 5g total fat (1 g saturated fat) 13mg cholesterol, 1 gram fiber & 26 gram protien.
  • Step #9 Daily value: 18% vitamin A, 37% vitamin C, 8% calcium, & 18% iron.
  • Step #10 {Kay's note, or shrimp, I would also add some crab, or clams to make a seafood Alfredo!}.
