Low-fat Glazed Chicken In Crockpot Recipe

Ingredients
  • 1 ts Salt
  • White pepper
  • oz
  • 1 c Milk, skim
  • 4 lb Russet potatoes -- abt 8
  • 1/2 c Plain nonfat yogurt
  • 4 Cloves garlic
  • 1 tb Fresh dill -- minced
  • 2 tb Chives -- thinly sliced
  • 2 qt Chicken broth
  • 1/2 c Lowfat jack cheese -- abt 2
  • Fresh chives or dill sprigs

Directions
  • Step #1 1.
  • Step #2 Peel & quarter potatoes.
  • Step #3 Place with garlic in a 6-8 quart pan; cover with broth.
  • Step #4 Bring to a boil over high heat; reduce heat, cover & let simmer til potatoes are tender when pierced, abt 20 min.
  • Step #5 2.
  • Step #6 Drain potatoes & garlic; return to pan.
  • Step #7 Mash with milk until smooth.
  • Step #8 stir in the yogurt, chives, dill, & salt; add pepper to taste.
  • Step #9 Spoon mix into a 2-3 qt shallow baking dish; Sprinkle top top this with cheese.
  • Step #10 If making ahead, cover with plastic wrap & chill up to 1 day.
  • Step #11 3.
  • Step #12 Bake in a 375F oven til warm in center & melted cheese is lightly browned, abt 30 min (abt 1 hr if chilled).
  • Step #13 Garnich w/ chives or dill sprigs.
