Low-fat Oatmeal Muffins Recipe

Ingredients
  • 1 ts Baking soda
  • 1/3 c Applesauce, sweet or unsweet
  • 2 c All purpose flour
  • 8 oz Vanilla-flavor lowfat yogurt
  • 1 c Sugar
  • 1/2 ts Salt
  • 1 lg Egg
  • 10 oz Semisweet chocolate chips
  • 1 ts Baking powder
  • 2 Ripe bananas; mashed

Directions
  • Step #1 preheat your trusty oven to 375~.
  • Step #2 In a large bowl, mix the sugar & the egg & mix well.
  • Step #3 Add the mashed bananas, applesauce, & yogurt and stir this to mix.
  • Step #4 stir in the the chocolate chips.
  • Step #5 In a separate bowl, mix the flour, baking soda, baking powder, & salt.
  • Step #6 Make a well in the center of the flour mixture & pour the wet ingredients into the well.
  • Step #7 Stir until just mixed.
  • Step #8 The batter will be lumpy.
  • Step #9 Pour the batter evenly into the two 8-c muffin pans that have been well greased or lined with paper muffin c.
  • Step #10 Bake for 10-15 mins, or until a toothpick inserted in the center of a muffin comes out clean.
  • Step #11 This is a light-colored muffin so be careful not to overbake.
  • Step #12 Let the muffins cool in the pan for 2-3 mins, then carefully remove and place on a wire rack to cool.
  • Step #13 NOTE: You can substitute two 4-oz jars of banana baby food (such as Gerber) for the applesauce & use just 1 ripe banana.
  • Step #14 Or try other baby food fruits such as pineapple, apple or plum.
