Low-sugar Refrigerator Strawberry Jam Recipe

Ingredients
  • 6 c Water
  • 1/2 ts Minced fresh tarragon
  • 1 c Corn kernels
  • 2 tb Minced fresh chives
  • Cut up
  • 3 lb Frying chicken -- skinned &
  • 1/2 c sliced sweet potatoes
  • 1/2 c sliced green onions
  • 1/2 c Dry sherry
  • 6 c Defatted Chicken Stock
  • 1/2 c Shelled peas
  • 1 ts Minced fresh basil
  • Seeded & minced
  • 2 c sliced tomatoes
  • 1 sm Jalapeno chile --

Directions
  • Step #1 1.
  • Step #2 In a large stockpot or Dutch oven over medium-high heat, sear chicken pieces in sherry by sauteing rapidly on both sides until browned (about 10 mins).
  • Step #3 remove this from pot & set aside.
  • Step #4 2.
  • Step #5 Add green onions, corn, tomatoes, & sweet potatoes, & saute for 5 mins in cooking liquid left in stockpot.
  • Step #6 If pot becomes dry, add a small amount of water.
  • Step #7 3.
  • Step #8 Add peas, basil, tarragon, chives, & chile & cook 5 mins.
  • Step #9 Add stock, the water, & chicken pieces.
  • Step #10 Bring to a boil, cover pot, then lower heat to medium, & cook for 45 mins.
  • Step #11 Note: For an even tastier soup, make this recipe the night before, let cool, & then put in the fridge overnight.
  • Step #12 The rich aroma & flavor of the herbs will intensify.
