Lt. Dan's Lemon Shrimp Recipe

Ingredients
  • 8 oz Cottage cheese
  • 1/2 oz Pine nuts, toasted & sliced sugar to taste lemon juice to taste
  • 1 oz Raisins, finely sliced
  • 8 oz Wholewheat shortcrust pastry

Directions
  • Step #1 Roll the pastry out very thin & cut it into small rectangles-- approximately 6x3 inches.
  • Step #2 You should have at least 24.
  • Step #3 Bake them in a moderately hot oven (375F for ten mins or till they are crisp and brown.
  • Step #4 Remove them & cool on a rack.
  • Step #5 Meanwhile mix the curd cheese with the ginger or raisins, the pine nuts & the sugar & lemon to taste.
  • Step #6 Set aside.
  • Step #7 When you are ready to serve, sandwich together two pieces of pastry with the cheese mixture.
