Lucile's Pain Perdu Lost Bread Recipe

Ingredients
  • 2 tb Oil, canola preferably
  • 1/2 ts Black pepper
  • 2 1/2 ts Salt
  • 1 lb Crawfish tails or shrimp
  • 1 tb Flour
  • 1 1/8 c Uncooked, long-grain rice
  • 5 cl Garlic, minced
  • 1/2 c sliced celery
  • 1/2 c sliced green pepper
  • 1/8 ts Cayenne pepper, or to taste
  • 1 c sliced onions

Directions
  • Step #1 In a large pot over medium-low heat, make a roux with flour & oil.
  • Step #2 Cook stirring constantly, until golden brown & smooth, at least 20 mins, preferably longer.
  • Step #3 Add onions & garlic & cook this until almost soft.
  • Step #4 Add 1-1/2 c cold water & let simmer 30 mins.
  • Step #5 Add crawfish & cook about 10 mins.
  • Step #6 (note: if using chicken or sausage, cook ingredients longer to ensure they'll be done when rice is done.
  • Step #7 ) Add 2 more c of water & bring to a boil.
  • Step #8 Add remaining ingredients, stir this to mix, but not too much.
  • Step #9 Reduce heat to low, cover pot, & cook about 30 mins or until rice is cooked.
  • Step #10 Try not to open lid during final cooking.
  • Step #11 Fluff rice thoroughly with fork before serving.
