Luscious Lemon Frosting Recipe

Ingredients
  • 2 c Crushed graham crackers
  • 6 tb Unsalted butter; melted
  • ---CRUST------

Directions
  • Step #1 --FILLING----- 24 oz Cream cheese; room temp.
  • Step #2 1 1/3 c Sugar 3 Eggs; room temperature 1/4 c Fresh lemon juice 1 tb Grated lemon peel 2 ts Vanilla extract--TOPPING----- 2 c Sour cream 3 tb Sugar 1 ts Vanilla extract---GLAZE------ 3/4 c Water 1/3 c Fresh lemon juice 1 Egg yolk 1/2 c Sugar 1 1/2 tb Cornstarch 1/4 ts Salt 1 tb Butter 2 ts Grated lemon peel--GARNISH----- Thinly sliced lemon peel, - halved & twisted FOR CRUST: preheat your trusty oven to 350 F.
  • Step #3 Butter 9-inch springform pan.
  • Step #4 mix crumbs & melted butter in bowl.
  • Step #5 Press mixture into bottom & up sides of prepared pan.
  • Step #6 Bake 5 mins.
  • Step #7 Cool.
  • Step #8 FOR FILLING: Preheat oven to 350 F.
  • Step #9 Using electric mixer, beat cream cheese until soft.
  • Step #10 slowly mix in sugar.
  • Step #11 Beat in eggs 1 at a time.
  • Step #12 Mix in lemon juice, lemon peel & vanilla.
  • Step #13 pour this into crust.
  • Step #14 bake this until slightly puffed, about 40 mins.
  • Step #15 Maintain oven temperature at 350 F.
  • Step #16 FOR TOPPING: mix all ingredients in small bowl.
  • Step #17 Spread on top of cake.
  • Step #18 Bake 15 mins; topping will not look set.
  • Step #19 Cool 30 mins.
  • Step #20 FOR GLAZE: mix water, lemon juice & yolk in heavy small saucepan.
  • Step #21 stir in the sugar, cornstarch, & salt.
  • Step #22 Bring to boil over low heat/flame, stirring constantly, about 10 mins.
  • Step #23 Add butter & lemon peel and stir until butter melts.
  • Step #24 Cool glaze for 20 mins.
  • Step #25 Spread glaze on cake.
  • Step #26 Cool completely.
  • Step #27 put in the fridge until well chilled.
  • Step #28 (Can be prepared 2 days ahead.
  • Step #29 ) Garnish with lemon slices.
  • Step #30 Serve cold.
