Luscious Lemon-filled Cupcakes Recipe

Ingredients
  • 1 pk 8-serving size lemon flav Gelatin dessert.
  • Cake layers, cooled
  • 1 12 oz. tub whipped topping.
  • 2 c Boiling water
  • 2 Baked 9-inch round white

Directions
  • Step #1 Place cake layers, top sides up in 2 clean 9-inch round cake pans.
  • Step #2 Pierce cake with large fork at 1/2 inch intervals.
  • Step #3 Stir boiling water into gelatin in medium bowl at least 2 mins until completely dissolved.
  • Step #4 Carefully pour 1 c of the gelatin over 1 cake layer.
  • Step #5 Pour remaining gelatin over second cake layer.
  • Step #6 put in the fridge 3 hrs.
  • Step #7 Dip 1 cake pan in warm water 10 seconds, unmold onto serving plate.
  • Step #8 Spread with about 1 c of whipped frosting.
  • Step #9 Unmold second cake layer, carefully placing it on first cake layer.
  • Step #10 Frost top & sides of cake with remaining whipped topping.
  • Step #11 put in the fridge at least 1 hr or until ready to serve.
  • Step #12 Decorate as desired.
  • Step #13 Store left over cake in refrigerator.
